These scrambled eggs are easy to make and versatile. You can bake in the oven for a slower weekend morning or on the stove top for a weekday breakfast.

8 large Eggs
2 tbsp melted butter
1 cup whole milk
1/2 tsp salt
1/2 tsp black pepper

Start with cracking the eggs into a bowl and whisk to incorporate. Add milk, salt and black pepper and whisk again. And that is your egg mixture. Next you can choose the method you cook them.
stove top method
Melt a couple tablespoons of butter in a saucepan on med-low heat. When butter is melted, pour the egg mixture in. Let cook for a couple minutes before stirring. Use a flat spatula and pull it through the egg mixture from on side of the pan to the other. Let sit for another minute or so and pull spatula through again. The stove top method usually takes under 10 minutes.
Once the eggs are almost cooked through but are still a bit runny, pull off the stove and give it a stir. They will finish cooking as they sit and this will keep them from getting overcooked and rubbery.
Now you can top them with some chives and parsley, scoop a bite onto toast and dig in! Or start making a breakfast wrap.
oven baked scrambled eggs
The oven method is perfect for a weekend morning. You can get your egg mixture together pour it in a (buttered) baking dish and put it in the oven while you make some coffee.
You use the same method of pulling a spatula through the egg mixture for these as well. Set a timer for ten minutes and then pull the spatula through, rotate the dish and do it again. Set the timer for another five minutes and do it again. If they are mostly cooked at this point you can pull them out, stir and let them finish outside the oven. If they seem too runny put them in for another few minutes and check again.
I like to make a large batch of these scrambled eggs and prep breakfast wraps ahead of time to make an easy breakfast. You can also use a croissant or bagel to make breakfast sandwiches. Or just have these eggs with some thick toast for a nice and simple breakfast.
Scrambled Eggs Two Ways
Ingredients
- 8 large Eggs
- 2 tbsp melted butter
- 1 cup whole milk
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
OVEN BAKED
- preheat oven to 350 and butter a smaller baking dish, I use a 6×8 dish
- whisk eggs, milk, salt and pepper together until fully combined
- Pour into baking dish and put in oven, set a timer for 15 minutes to start
- After 15 minutes, stir the eggs using a flat spatula, pull the mixture away from the sides of the baking dish.
- Set timer for 10 more minutes and stir again, If eggs are mostly cooked and just a little runny, pull out of oven and stir to fully combine. Eggs will finish cooking off the heat.
- Serve or use immediately. any leftovers can be stored in container in refrigerator and re-warmed in oven.
STOVE TOP
- whisk eggs, milk, salt and pepper together until fully combined
- melt butter in a shallow sauce pan on med low heat
- add egg mixture, move mixture around every few minutes with a spatula pulling the spatula through the eggs instead of a circular motion. this takes around 10 mins.
- once eggs are almost completely cooked, but still a little runny, pull off the heat and stir together. eggs will finish cooking as they sit. serve immediately
- serve or use immediately. leftovers can be stored in container in refrigerator and re-warmed in the oven.
