I use the peels from making baked applesauce to make an apple simple syrup that was super yummy.
Just put the peels in a medium to large pan add equal amounts of water and sugar and stir. Heat the mixture and stir until the sugar is dissolved then remove the spoon and do not put back in. Cook until about one third the amount originally in the pan. Strain the apple peels and discard. Let apple syrup cool and then store in a jar in the refrigerator.
Use in cocktails, tea, over ice cream and in desserts.
Ratio to use
1 cup sugar to 1 cup water plus at least 1 cup apple peels
